August: 2017 Dry Riesling

1 # P&D 16/20 shrimp
1 Tbsp olive oil
3 C medium diced summer squash
2 C rough chopped Rainbow Chard
1 Tbsp Garlic
1/4 C Leeks
1/4 C White wine and 1 Tbsp lemon juice
1/4 C butter
1 tsp salt
1/4 tsp red chili pepper flakes
1/2 C pesto
1 C medium diced heirloom tomatoes
1/4 C fresh parmesan
Saute shrimp in tbsp olive oil and season with salt and pepper. Pull out shrimp once cooked and set aside. In the same pan, saute the squash, garlic, salt, chili flakes, and leeks until squash has some color and is cooked through. Add chard and wilt, deglaze with lemon juice and white wine. Cook down for 30 seconds, then turn off the heat and add tomatoes and butter. Stir around until butter is melted, put into a bowl. Heat pesto with shrimp and top on veggies. Then garnish with parmesan and pour a generous glass of 2017 Dry Riesling. Enjoy!
